Cooking with Schwartz | 3 Easy Recipes Anyone Can Make | AD

Hello everyone! I hope you’re all well.

I turned 22 two days ago and am soaring quicker towards actual adulthood than I would like to. To go with the fact that getting a year older=adulting and adulting= supposedly getting your shit together, I’ve got a fantastic recipe post with you guys today that I’m writing with Schwartz – specifically, with the Smoked Paprika Spice. I’d really like to think of myself as a mature, domestic goddess but, in reality, the recipes I’ve created for this post are all super, super simple.

However… the use of good quality spices really do take them up a notch in the flavour department with such ease. When you’re busy in the working week and don’t have too much time to craft masterpieces in the kitchen, there’s nothing more satisying than an easy and quick meal that tastes good and is nutritious as well. Bonus!

So, if you fancy gaining some inspo for yummy vegan food that anyone can manage to make, keep reading and enjoy.

 

 

Breakfast – Smashed Avo and Paprika Toast 🥑

Some people might see this as a task-and-a-half first thing in the morning and not necessarily jump to avocado when searching for a super quick brekkie fix, but it really does take less than 5 minutes to make, trust me! I more often than not prefer a breakfast like this as opposed to a bowl of cereal as it noticeably energises me significantly more, so I’d suggest getting all the ingredients out the night before just so you’re ready to tear into them the minute you wake up. (Anybody else get that hangry after being asleep for 8 hours…?)

Ingredients:

  • Bread of your choice (I prefer brown bread as it’s more filling and nutritious)
  • 1 ripe avocado
  • Lemon juice
  • Cherry tomatoes
  • Salt & pepper
  • Schwartz Smoked Paprika

Method:

1 – Whack your bread in the toaster before anything else so it’s ready to go ASAP.

2- Cut your avocado up in a bowl, sprinkle in some salt and pepper, a dash of lemon juice and a few pinches of Schwartz Smoked PaprikaMash up with the back of a fork until smooth.

3 – Grab your toast and smear the avocado mixture evenly over. Chop up some fresh cherry tomatoes, add to the toast and voila. For the finishing touch, sprinkle some more Schwartz Smoked Paprika for a tasty and smokey kick. It’s that simple!

 

 

LunchSmokey Tomato & Sausage Pasta 🍝

This meal is super quick to make and ideal for lunch-prepping in the week. I absolutely love meal prepping as it ensures I have a really tasty and healthy lunch for my day at work, and when it can be this easy I would urge anyone to do it!

Ingredients:

  • Vegan sausages of your choice (I used Richmond for this recipe, but any will work)
  • Penne pasta (I use spelt as I find it doesn’t bloat you out so much.)
  • Tomato passatta and puree
  • A glug of red wine (not essential but it really adds a huge depth of flavour)
  • A tablespoon of vegan pesto (I use Sacla)
  • 3 garlic cloves and 1 red onion
  • Schwartz Smoked Paprika
  • Optional extra veggies (aubergine or courgette work nicely with these absorbent flavours.)
  • Chopped basil

Method:

1 – Preheat your oven to 180* and whack in the sausages. Once they’re in, boil the kettle and start boiling your pasta.

2- Heat a little oil in a pan and add your onion and garlic, chopped and crushed respectively. Chuck in any extra veggies you fancy, or leave the sauce to work solo.

3 – Add your passatta, tomato puree and pesto. Give a good stir until combined, then add your red wine in a well in the middle of the pan. Allow to bubble lightly and stir in slowly.

4 – Once combined and simmering away, add a teaspoon or two of Schwartz Smoked Paprika to taste.

5 – Once the sausages are cooked, chop up into small pieces and stir into your rich sauce. Take the pasta away from the boil, drain and combine with your sausages, sauce and masses of chopped fresh basil. Et voila.

 

 

Dinner – Smokey Paprika Veg Traybake 🍆

Ah, the one-pot dinner. There’s nothing more satisfying in life than crafting a delicious meal that only requires 10 seconds of washing up afterwards. Here I made a veggie traybake which really is flexible as most vegetables work well, however I’ll suggest some favourites that always roast successfully!

Ingredients:

  • 1 aubergine
  • 1 pack of mushrooms
  • 1 courgette
  • 2x red peppers
  • 1 red onion
  • 1 white potato
  • 1 sweet potato
  • 1x block tofu chopped
  • Garlic paste
  • Schwartz Smoked Paprika
  • Fresh chopped herbs (coriander and parsley are ideal for this dish!)

Method:

1 – Chop all your veggies and tofu up into bite-size chunks. Add to a large mixing bowl with olive oil, garlic paste and the holy grail that is Schwartz Smoked Paprika. 

2 – After thoroughly washing your hands with soap and water (we ain’t here to catch Coronavirus) massage the pieces with your hands to ensure every bit is covered with oil and the spice. Season with extra salt and pepper if you feel it needs it.

3 – Bake in the oven for around 30 minutes, making sure you give the tray a shake or two in between.

4 – It’s really that easy; perfect after a day at work when you really cant be bothered to turn into Gordon Ramsay. Sprinkle over your fresh chopped herbs and serve with a big dollop of hummus. Delish.

TOP TIPS:

  • Cover the tofu pieces in a thin layer of flour before cooking. It helps them to crisp up a bit!
  • Microwave your potatoes for 10 minutes before roasting them as they can take forever to cook.
