Hey everyone! I hope you’re all well.
I haven’t done a foodie based post, namely a ‘What I Eat In A Day’ for 6 bloody months, so here I am today showing you what I’ve been shoving in my gob.
I recently returned from a holiday in Malia, and, as you can imagine, I ate some right shite during that week. They say you are what you eat, so, to be honest, I’m surprised I haven’t turned into a spring roll. My diet mainly consisted of curly fries, halloumi and chocolate magnums for the entire week, and I came back feeling rather unwell, so have been determined this week to get some kind of nutrition into my body.
Fried food is OFF LIMITS for a while. Well, until my takeaway curry tonight. But that’s an exception. Anyway, without further ado…
Breakfast
Ahh, my favourite meal of the day. I whipped up my FAVOURITE brekky, smashed avo on toast. Typical Tumblr white girl.

Oh my, yummmm. This is hands-down my favourite breakfast (or lunch) and it’s so easy and packed with goodness. I use wholemeal seeded toast, and mash up my avocado with lemon juice, black pepper and a little salt. To really get things going, I topped it with sundried tomatoes and purple basil. Absolute treat.
Not really sure why we currently have purple basil in the house instead of the normal green variety… just one of those Waitrose ‘essentials’ isn’t it?
But yeah, this is one of my absolute favourite things to make for breakfast and it keeps me really full. For about 30 mins.

P.S – I always have a smoothie or fresh juice in the morning along with a big glass of water. Fruit is perfect in the morning to get those energy levels up!
Lunch
To make this really simple and healthy salad, put the following ingredients into a bowl and mix well:
- 1/2 a tin of butter beans
- A generous handful of finely chopped lettuce
- Chopped cucumber
- A few chopped sundried tomatoes
- A handful of chopped basil (it really doesn’t need to be the purple kind)
- A squeeze of tomato puree
- A drizzle of chilli oil
Obviously you can adapt the recipe to your tastebuds, but that’s how I made mine. It took about 5 minutes and was v tasty. It would be a lot more filling with some cous-cous, I reckon.
Dinner
I had one of those random dinners where your Mum just cooks up everything in the fridge that looks like it might be on the turn… delicious nevertheless.
I had a crispy baked jacket potato with Flora Freedom ‘butter’ (probably the tastiest vegan butter substitute on the market, FYI), baked halloumi (naughty), a corn on the cob and garlic mushrooms stir-fried with beansprouts and edamame beans. Bit mixy-matchy, but it went down like a treat after my first gym class in 3 weeks (horrendous.)
Snacks
I know I said I was being healthy and all, but I may have accidentally fell into Hove Patisserie during my lunchtime walk, and mistakenly slapped my debit card onto the machine to pay for one of these vegan brownies. Oops.
YUM. If you find yourself in Hove, make it your mission to eat one of these beauties. They’re soft, fudgey, and sooo chocolately; I literally can’t walk past without, like I said, somehow stumbling in and leaving with one in my bag.
After dinner I’m always desparate for something sweet, so I had one of these lovely ‘Smooze‘ coconut and pineapple fruit ices. They’re made with coconut milk, completley vegan, high in Vitamin C and I looove them. They’re the perfect, guilt-free cool-down in this shockingly tropical weather.
